Coming from Andalusia, Spain, our estates provide ideal conditions to produce oils with great fruitiness, marked by notes of fresh herbs. An intense and complex oil, depending on its ripeness, presents herbal notes, tomato, apple, fig, among others. It is stable and has medium to high intensities of spiciness and bitterness. The profiles are varied and it is the flagship variety in southern Spain.

Depending on the harvest point, herbal notes, tomato leaf, and apple stand out. In earlier harvests, it has fig notes, and in later points, rue leaf.

Typically intense fruitiness, with medium bitterness and spiciness.
