Pategras cheese is a cheese that retains a firm, semi-hard, semi-cooked, salty, and aged paste. It has medium moisture, semi-fat with an elastic consistency, and may occasionally have some well-dispersed small holes. Its flavor has a pronounced sweet note similar to freshly roasted peanuts and offers a soft and very pleasant aroma.

The aging time can range from one month to six months, depending on the type of cheese, giving it a very uniform yellowish color, either more intense or paler.
